Risotti alternativi (‘alternative risotti’)
Bomba di riso (lit. ‘Rice bomb’)
a baked risotto, common in Parma and Reggio Emilia area, but with several variants.
In the traditional version rice is boiled and dressed with a pigeon ragù (but you can also use beef), than mixed with mushrooms, herbs, cheese and eggs, and baked.
Or the rice is cooked in bianco (‘plain’), covered with prosciutto, baked and served with ragù or mushroom sauce.
