Many traditional italian recipe are actually smart way to recycle leftovers.

La ribollita is a typical Tuscan soup made with cannellini, cabbage, carrots, cavolo nero (‘black cabbage’), beet, onion, and bread.

Ribollita literally ‘re-boiled’, a  poor dish, probably created by an unknown farmer’s wife who just combined leftfovers and a couple of inexpensive ingredients.
