#64 I miss castagne – 3

There are many ways to use dried castagne

…and farina di castagne (‘chestnut flour’)

in my area they made castagne bread, pasta, gnocchi, and a sort of pancakes you can eat with ricotta or cheese.

Lasagne bastarde, so called because they are made with half white flour and half farina di castagne

Frittelle di castagne (‘deep fried pancakes’)

Pattona, a sort of chestnut pancake, with ricotta
